Pad Thai
  1. In a bowl add peanut butter, fish sauce, soy sauce, brown sugar, water and lemon or lime juice. Grate ginger, whisk well until smooth. Don't worry if the mixture curdles.

  2. Bring a pan of water to a boil, add rice noodles, submerge, then remove from heat and cover for 5 – 10 minutes or just until tender. Drain noodles and rinse with cold water.

  3. In a large skillet add oil, then add shrimp and cook just until almost cooked. Add shredded carrots and cook for 1 minute.

  4. Push food to one side and add mixed eggs and on a low medium heat cook just unti barely scrambled.

  5. Add drained noodles, sauce and mix well. Add green onion, cilantro and just combine. Add sriracha if using. Garnish with peanuts and more cilantro if desired. Enjoy!
