  1. Start by seasoning your chicken thighs with salt and pepper to create a flavorful base.

  2. In a skillet over medium heat, sauté the chopped onion and minced garlic until translucent and fragrant, about 2-3 minutes.

  3. In a bowl, combine the dry white wine, chicken broth, and Dijon mustard, whisking until well mixed.

  4. Add the sautéed onions and garlic to the bottom of your slow cooker and place the seasoned chicken thighs on top. Pour the wine mixture over all and sprinkle dried thyme.

  5. Cover and set your slow cooker to low for 6-8 hours or high for 3-4 hours.
