    Mixed Olive Sweet Pepper Feta Salad

    Tzatziki

  1. In a large bowl, make the meatball mixture by mixing all ingredients until combined. Transfer to the fridge.

  2. Meanwhile make the tzatziki and salad. For the tzatziki, mix all ingredients until combined. For the salad, in a large bowl, whisk the olive oil, lemon juice and oregano. Add in the peppers, cucumber, onion, olives and feta. Stir to coat in the dressing. Transfer to the fridge to marinate.

  3. Using your hands (wet hands to avoid sticking), form the mixture into about 16 meatballs. Heat a skillet with 2-3 tbsp of olive oil over medium heat, pan sear the meatballs for 3-4 minutes on each side for about 12-15 minutes total until cooked through and the internal temperature reaches 165F.

  4. Serve the meatballs with rice if desired, and the salad and top with tzatziki.
