Orange And Pistachio Little Cakes
  1. Combine 120g sugar with 100g soft butter, 20ml lemon Olive Oil.

  2. Mix in 2 eggs, the juice of an Orange and the grated zest of an Orange.

  3. Fold in 125g self raising flour.

  4. Butter and flour cake moulds.

  5. Sprinkle base of moulds with chopped pistachio nuts.

  6. Transfer cake butter in moulds.

  7. Bake in oven until golden brown. ( about 15 minutes)
