Mashed Potatoes With Chicken Stock
  1. Wash the potatoes thoroughly and rub avocado oil on the skins.

  2. Cut the potatoes in halves and place them in a pot.

  3. Mix chicken stock and water, add a pinch of salt, and let the potatoes boil.

  4. Drain the potatoes, reserving some of the cooking liquid.

  5. Mash the potatoes with butter, a splash of the reserved broth, and black pepper.

  6. For extra flavor, mix in sour cream and chopped chives if desired.
