Wash the potatoes thoroughly and rub avocado oil on the skins.
Cut the potatoes in halves and place them in a pot.
Mix chicken stock and water, add a pinch of salt, and let the potatoes boil.
Drain the potatoes, reserving some of the cooking liquid.
Mash the potatoes with butter, a splash of the reserved broth, and black pepper.
For extra flavor, mix in sour cream and chopped chives if desired.
