Season chicken with spices, oil, and lime juice. Mix well, then roast at 400F for 30-35 mins. Let cool slightly, then chop.
For the Dressing, combine everything into a small food processor and process really well. Dont forget the salt! If desired, thin out the sauce with a splash of water.
Cook 8 oz of your fav high-protein or lowcarb pasta. Drain and rinse.
Prep your lettuce, onion, scallions, and jalapeno/cucumbers if using.
In a large bowl or jar, combine the cooked pasta, diced chicken, chopped romaine, scallions, charred corn, and a handful of finely chopped cilantro.
Pour the dressing and toss well. Top with feta, cilantro, and a few extra jalapeño slices if you like a little extra heat.
