Mince the garlic and slice the jalapeños to your desired thickness, set aside
Using a toothpick, devein the shrimp as shown in video. Trim the pointy part of the head, part of the head and the legs to discard
Rinse well and pat dry
Add Shrimp to a large bowl
Add garlic powder, paprika, sea salt, and cornstarch to coat the shrimp
Mix together the shrimp seasonings listed above and set aside
On medium high heat, add oil to a pan or wok
Once oil is hot, in small batches add in the shrimp
Fry each side for 1-2 minutes
Remove and set aside
Discard the frying oil
In the same pan or wok on medium high heat, drizzle in neutral oil
Add jalapenos and garlic
Saute for 1-2 minutes
Add in the fried shrimp and sprinkle in the shrimp seasonings
Stir or toss well to evenly distribute the seasonings
Turn off heat
Enjoy with rice
