Ginataang Kalabasa With Shrimp (squash In Coconut Milk)
  1. Heat the cooking oil in a large pan or wok over medium heat. Sauté the garlic, onion, and ginger until fragrant and softened, about 2-3 minutes.

  2. Add the cubed kalabasa to the pan. Pour in the coconut milk and water, stirring gently. Bring to a simmer, then lower the heat and cook for about 10-15 minutes, or until the squash is tender but not mushy.

  3. Add the shrimp to the pan, cooking for 3-4 minutes, or until they turn pink and are fully cooked.

  4. Stir in the sitaw and long green chili (if using). Simmer for another 3-5 minutes, or until the vegetables are cooked but still crisp.

  5. Season with fish sauce or salt and ground black pepper to taste. Adjust seasoning as needed.

  6. Serve the Ginataang Kalabasa with Shrimp warm over steamed rice.
