Cook chicken in the air fryer or oven until done, rest briefly, then shred or dice small
Blend cottage cheese, light mayonnaise, juice of 1 lime, and 1 jalapeño with water as needed to create the creamy dressing
Add chicken, beans, corn, and vegetables to a large bowl
Mix in cheese or top when serving
Pour dressing over the salad and stir
Add the juice of one lime and mix well
Taste and add more salt and/or any other seasonings like tajin as desired
Let sit 10 minutes, then mix once more so everything is evenly coated
Store in an airtight container in the fridge for 4–5 days
