Hong Kong-style Stir-fried Noodles

  1. Soak the egg noodles in hot water for 3-5 minutes.

  2. Once the noodles have separated, drain the water and allow to dry.

  3. Slice the Chinese greens and any other vegetables into strips.

  4. Finely slice the spring onions.

  5. Make the sauce: light soy sauce, oyster sauce, white pepper, sugar

  6. Heat 1 tablespoon vegetable oil in a wok to high heat.

  7. Add the Chinese greens and stir-fry for 2-3 minutes.

  8. Add the bean sprouts and stir-fry for a further minute, add a little of the sauce to flavor.

  9. Take out all the cooked vegetables.

  10. Add some oil at high heat

  11. Add the noodles and stir-fry for 1-2 minutes.

  12. Add the sauce from the edge of the wok and stir.

  13. Add greens and sausage

  14. Flavor with dark soy sauce, avoid wok, directly on noodles. Continue separate noodles with sticks.

  15. Turn off, season with sesame oil
