Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, combine ground chicken, mozzarella, Parmesan, egg, garlic, breadcrumbs, Italian seasoning, paprika, onion powder, salt, pepper, and parsley.
Mix gently until just combined—don't overmix.
Form the mixture into about 16–18 meatballs.
Place on the prepared baking sheet and lightly brush with olive oil.
Bake for 18–22 minutes, until golden and the chicken reaches 165°F (74°C) internally.
For an extra golden, cheesy top, broil for 1–2 minutes at the end, watching carefully.
Serve warm with marinara, roasted vegetables, salad, or your favorite dipping sauce.
