Start with some chopped carrots, an onion, celery, a leek, and then six cloves of garlic.
Cover with some broth. I'm using chicken broth here and two cups of water.
Throw in a bay leaf and simmer until the veggies are tender for about 20 minutes.
Remove the veggies. I almost forgot to take out the bay leaf here and then blend until nice and smooth.
Back into your pot with a hot broth and bring back to a bubble and season with salt.
Adding the gnocchi, I'm using the Trader Joe's pumpkin gnocchi and then finish with a bit of butter and top with basil, cream and black pepper.
