Roasted Chicken and Vegetable Tray bake With Lemony Herb Salsa
  1. Preheat the oven to 200ºC (180ºC fan).

  2. Add the potatoes, pepper, aubergine and onion to a large baking dish. Season with salt and pepper and drizzle with olive oil. Roast for 15 minutes.

  3. Take out of the oven and place the chicken on top. Rub a small knob of butter over the chicken skin then season with more salt. Roast for 25-40 minutes until the chicken and potatoes are fully cooked (this will depend on the size of your chicken breast).

  4. While that's cooking, mix all the ingredients for your salsa together with enough oil to make it a spoonable consistency.

  5. Once cooked, spoon over your salsa then serve up, making sure you pour over all the chicken juices. Enjoy!
