Soak 2 cups of dates in hot water for an hour. Remove skins and pits.
Add 1 tbsp of the soaking water and the dates to the food processor. Process finely and set aside.
In a clean bowl, whisk the eggs and dates. Add the cinnamon, vanilla extract, and butter and mix well. Add the flour and baking powder, and mix well. Finally, stir in the nuts.
Pour the batter into a well greased 8 or 9 inch pan. Bake approximately 30 minutes at 350 F or until a toothpick inserted in the middle comes out clean.
