Blueberry-lemon Energy Balls
  1. Add ¾ cup walnuts, ½ cup dates and ¼ cup blueberries to a food processor; process until chopped and combined, 7 to 10 seconds.

  2. Add ¾ cup oats, 2 tablespoons maple syrup and 1 tablespoon lemon juice. Continue processing until a smooth, thick paste forms, 20 to 30 seconds.

  3. Transfer the paste to a small bowl; add 1 teaspoon lemon zest and mix to combine.

  4. With your hands, form and roll the mixture into 18 small balls.
