Mix all ingredients until no dry spots remain.
Cover with a wet towel, let rise for 1-2 hours (depending on the temperature in the room).
Preheat oven to 450°F with Dutch oven inside.
Turn dough onto floured surface, shape gently by tucking sides in.
Place seam-side down on parchment.
Transfer parchment with the dough to hot Dutch oven. Lid on → 30 min.
Lid off → 10 min more, until golden.
Let it cool on the cooling rack.
