Red Beans and Rice LITE
  1. Slice and put your sausage into a pan to brown on either side

  2. While the sausage is browning, dice the onion, celery, and green bell pepper

  3. Remove the browned sausage, but leave the browning and grease in the pan, saute the onion, celery, and pepper in that, add water if it starts to stick.

  4. Add garlic and seasoning and stir - right now everything is approximate but you know what to do

  5. Add beans with juice, stir. If the mixture is too thick, add some water and simmer for at least 30 minutes. the longer the better

  6. Serve with rice
