No-water Magic Chicken Soup
  1. Layer the veggies in a Dutch oven or heavy bottomed pot

  2. Create a small divot in the center so the chicken fits nice and snug

  3. Add some ginger pieces and cranberries on top

  4. Cover tightly with a lid

  5. Simmer on LOW heat for about 2 hours or until the chicken pulls apart easily

  6. Add pieces of chicken to your bowl and pour the liquid over the chicken

  7. Garnish with scallions and enjoy
