Cool water to less than 60°F
Mix water and yeast together
Add flour and olive oil, mix for 2 minutes
Keep mixing on low speed, add sugar and salt
Mix for 10 more minutes
Cover with plastic wrap and rest for 1-3 hours
Divide into dough balls
Shape and seal the seam
Place in lightly oiled containers
Cover and refrigerate for 1-3 days (3 days is ideal)
Let come to room temperature before baking
