Add the cooked chicken breasts to a stand mixer with the paddle attachment. Turn it on low and process for 30-60 seconds or until it reaches your desired texture. Be sure not to over-process the chicken, as it can become mushy.
Add the shredded chicken to a mixing bowl. Add the 0% Greek yogurt, mayonnaise, Dijon mustard, fresh squeezed lemon juice, kosher salt, garlic powder and cracked black pepper. Mix until well combined.
Add the diced celery, onions and fresh herbs. Gently fold together. Taste and adjust seasoning as needed.
