Heat two bags of frozen fire roasted corn on the stove
Let the corn cool in the refrigerator until cold
Chop cucumber, red bell pepper, and shallot using a veggie chopper
Combine chopped vegetables with cold corn in a bowl
Add one can of black beans to the mixture
Add feta cheese to taste
Mix in light mayonnaise (or Greek yogurt as a substitute)
Add juice of one lime
Season with salt, garlic powder, onion powder, and chili powder to taste
Add avocado just before eating to prevent browning
Serve with tortilla chips
