Scoopable Veggie Salad
  1. Heat two bags of frozen fire roasted corn on the stove

  2. Let the corn cool in the refrigerator until cold

  3. Chop cucumber, red bell pepper, and shallot using a veggie chopper

  4. Combine chopped vegetables with cold corn in a bowl

  5. Add one can of black beans to the mixture

  6. Add feta cheese to taste

  7. Mix in light mayonnaise (or Greek yogurt as a substitute)

  8. Add juice of one lime

  9. Season with salt, garlic powder, onion powder, and chili powder to taste

  10. Add avocado just before eating to prevent browning

  11. Serve with tortilla chips
