Vegetable Spring Rolls
  1. Soak a rice paper wrapper in warm water for about 20-30 seconds until it is soft and pliable.

  2. Lay the wrapper flat on a clean, damp cloth. In the center, place a small handful of mixed vegetables, a few berries, and mint or basil leaves.

  3. Fold the bottom half of the wrapper over the filling, then fold in the sides and roll tightly.

  4. Repeat with the remaining wrappers and filling.

  5. Serve immediately or store mix without being wrapped in an airtight container.
