Mini Pineapple Upside Down Cakes
  1. Preheat oven to 350 degrees F and grease your muffin pan (jumbo 6 compartments)

  2. In a small bowl, mix brown sugar and butter

  3. In another bowl, mix all the ingredients for the cake

  4. Add the brown sugar and butter mixture to the muffin tin

  5. Place the pineapple and cherry in the center

  6. Pour your cake batter

  7. Bake for 20 minutes

  8. Turn out onto a plate

  9. Preheat oven to 350°F (175°C)

  10. Take the juice from canned pineapple

  11. Spray muffin tins (18) with non-stick oil

  12. In a bowl, combine melted butter and brown sugar

  13. Add a tablespoon of the mixture to the bottom of each pan

  14. Make the cake mix according to package directions, but use pineapple juice instead of water

  15. Add a pineapple slice to the bottom of each pan

  16. Add half a cherry to each pineapple slice

  17. Add ¼ cup of the cake mix

  18. Bake for 20 to 25 minutes or until golden brown

  19. Remove from oven

  20. Let stand

  21. Turn out

  22. Serve
