Mushroom Shallot and Herbed Goat Cheese Tarts

Ingredients

• For the Filling:

• Mushrooms (cremini, shiitake, or oyster), thinly sliced

• 1-2 shallots, finely chopped

• 1-2 cloves garlic, minced

• Fresh thyme, chopped

• Fresh sage, chopped

• Salt and black pepper, to taste

• For the Tarts:

• Puff pastry (store-bought or homemade)

• Herbed goat cheese (or regular goat cheese with added herbs)

• For Cooking:

• Olive oil

• Butter

    Instructions

  1. Prepare the Ingredients:

    • Clean the mushrooms with a damp cloth and slice them thinly.

    • Peel and finely chop the shallots and mince the garlic.

    • Rinse and dry the fresh thyme and sage.

  2. Cook the Mushrooms and Shallots:

    • Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat.

    • Once the butter has melted, add the sliced mushrooms.

    • Sauté the mushrooms for about 8–10 minutes, stirring occasionally, until they become tender and golden brown.

  3. Add Shallots and Garlic:

    • Add the chopped shallots and minced garlic to the skillet with the mushrooms.

    • Cook for an additional 3–4 minutes until the shallots turn translucent and the garlic is fragrant.

  4. Reduce Moisture:

    • Continue cooking the mixture until excess moisture evaporates, which helps prevent the pastry from becoming soggy.

    • Season with salt, black pepper, and the finely chopped thyme and sage.

    • Stir to combine and then remove from heat. Allow the mixture to cool slightly.

  5. Preheat the Oven:

    • Preheat your oven to 400°F (200°C).

  6. Roll Out the Puff Pastry:

    • On a lightly floured surface, roll out the puff pastry.

    • Cut the pastry into squares or circles, based on your tart shape preference.

  7. Assemble the Tarts:

    • Place a spoonful of the mushroom mixture in the center of each puff pastry piece.

    • Add a dollop of herbed goat cheese on top of the mushroom mixture.

    • Gently fold the edges of the pastry to create a slight border that helps keep the filling in place.

  8. Bake:

    • Arrange the assembled tarts on a parchment-lined baking sheet, ensuring there is space between each tart.

    • Bake for 15–20 minutes, or until the pastry is golden brown, puffed up, and the goat cheese has melted and lightly browned.

  9. Finish and Serve:

• Remove the tarts from the oven and let them cool for a few minutes.

• Garnish with additional fresh herbs if desired.

• Serve warm as an appetizer, snack, or paired with a fresh salad for a complete meal.

Notes

• Mushroom Variations: Consider using a mix of cremini, shiitake, and oyster mushrooms for a more flavorful, aromatic filling.

• Preventing Soggy Pastry: Ensure the mushroom mixture is thoroughly cooked to remove excess moisture.

• Herb Variations: Feel free to experiment with other herbs like rosemary, either in addition to or instead of thyme and sage.

Enjoy these delicious tarts as a savory appetizer or a delightful snack!
