Juicy Chicken In Green Tomatillo Broth
  1. Season chicken with 1 teaspoon salt, ½ teaspoon ground cumin, ½ tablespoon black pepper, and 4 minced garlic cloves

  2. Fully combine the seasoned chicken and set aside

  3. Add 10 tomatillos, 1 onion, a handful of cilantro, and 1 cup water to a blender

  4. Blend until smooth and set aside

  5. Place burner on medium-high heat and add 8-10 pieces of bacon to a hot pan

  6. Cook bacon for 6 minutes until crispy

  7. Remove bacon and reserve 2 tablespoons of bacon fat, discarding the rest

  8. Add jalapenos and green onions to the pan with bacon fat

  9. Add seasoned chicken to the pan and sear for 3 minutes on medium heat

  10. Add onions, bacon, chile, green parts of onion, blended tomatillo mixture, 1 cup beans, and 1 cup bean broth

  11. Mix all ingredients thoroughly until fully combined

  12. Continue cooking for 13-15 minutes until everything is cooked through

  13. Turn off burner and garnish with extra cilantro before serving
