In the bottom of a large bowl, add the diced onion and the vinegar and let marinated for 15 minutes. This will soften the onions and take some of the bite away.
Add the oil, honey, salt and pepper and fresh herbs and stir to combine.
To the dressing, add the chick peas, roasted peppers, sun dried tomatoes and feta and stir to combine.
Check for seasoning.
