Mushroom & Caramelized Onion Soup With Cheesy Toasties
  1. Melt butter in a large pot. Add onions, bay leaves, thyme, and salt. Cook 30–40 minutes until caramelized.

  2. Stir in garlic, then deglaze with white wine. Simmer until reduced.

  3. Add flour, cook 2 minutes, whisk in broth. Simmer 20–25 minutes.

  4. In skillet, sauté garlic in butter and oil. Add mushrooms and thyme. Cook 10–12 minutes until browned.

  5. Toast baguette slices, top with Gruyère and Parmesan, broil until bubbly.

  6. Ladle soup, top with toasties, garnish with thyme and Parmesan.
