Pour milk into saucepan and sprinkle gelatin on top in a thin layer
Mix slightly and allow the gelatin to bloom (hydrate) should turn into a thick goo
Place over low heat and mix until it runs thin
Add to a mixing bowl and allow to sit for 5 minutes to cool slightly
Add protein and whisk until it doubles or triples in volume
Pour into parchment lined pan and allow to harden for at least 2 hrs
Once ready, cut into shapes and cover in melted chocolate + coconut oil mixture (coconut oil helps thin out the chocolate for a thinner shell over the marshmallow)
