Soak cashews and almonds overnight or a few hours before using.
Boil a carrot until tender in a pot with boiling water.
In a high speed blender, place cashews, almonds, water, corn starch, coconut oil, liquid smoke, salt and agar-agar. Blend on high for 1 minute, or until smooth.
Transfer the mixture to a saucepan and heat over medium-low heat, stirring constantly. Until it becomes cheese-like and thick!
Pour the cheese into the prepared pan. Let the mixture cool then cover it and put in the fridge overnight to set.
Slice and enjoy.
