Finely chop the onion, garlic and capsicum (or blitz them in a food processor), then squeeze out as much excess liquid as possible.
Add the vegetables to the chicken mince along with the parsley and Mingle Peri Peri Rub. Mix really well until everything is evenly combined. If you have time, let it marinate for at least 1 hour; otherwise, you can cook it straight away.
Lightly oil a baking tray and spread the chicken mixture out evenly. Using a knife or spatula, score it into portions as shown in the video.
Bake in a preheated oven at 180°C for 20 minutes. Remove the tray halfway through and carefully drain off any excess liquid.
Increase the oven to 200°C and bake for a further 5–6 minutes, or until the kebabs are golden and slightly crispy on top.
For the salad, combine all the ingredients in a bowl and toss well.
For the sauce, mix all the ingredients together until smooth, then divide it evenly between two bowls. Stir the paprika into one portion to create the topping sauce.
Serve the kebabs in souvlaki wrap, over rice, or alongside the salad with plenty of sauce.
