Heat a large pan or wok over medium-high heat and add some oil.
Add the beaten eggs and scramble until fully cooked. Remove from pan and set aside.
In the same pan, add a bit more oil and sauté the onions, garlic, carrots, and peas until the vegetables are tender.
Add the chilled rice to the pan and break up any clumps.
Stir in the soy sauce, oyster sauce, sesame oil, salt, and pepper. Cook for a few more minutes.
Add the scrambled eggs back to the pan and mix until everything is well combined.
Remove from heat and garnish with chopped green onions.
Serve hot and enjoy!
