Preheat the oven to 375°F.
In a large mixing bowl, cream the butter and sugars together using a hand/electric mixer on medium speed until the mixture is smooth.
Add eggs, vanilla, salt, and baking soda to the butter mixture. Mix on medium speed until the ingredients are incorporated and smooth.
Add flour. Mix on low speed until flour is no longer loose, then on medium speed until fully incorporated.
Peel and mash 1 whole banana with potato masher. Add mashed banana and chopped walnuts to the dough and mix on low speed until mixed evenly.
Line a cookie sheet with parchment paper. Using a medium-size cookie scooper, scoop cookie dough (2 tablespoons) onto a parchment-lined cookie sheet at least 2 inches apart.
Bake for 10 to 12 minutes, until the edges are browned and set.
Slide the parchment paper with cookies off of the cookie sheet, directly onto the counter for cooling. (If not using parchment paper, let the cookies sit for 1 minute and then remove to cool on the counter or wire rack.)
