Holiday Soup
  1. Wash beans, place into a plastic container, cover with 2 inches of water and let soak in the refrigerator overnight.

  2. Drain

  3. In a heavy pot or crock pot put the beans, 1 quart water and all the other ingredients.

  4. Simmer for 3-5 hours.

  5. Remove the ham hock, take the meat off the bone and add back to soup.
