High Protein Red Lentil Buns
  1. Soak red lentils for 4 hours. Drain completely.

  2. Blend with ¼ cup water into a smooth, fine paste.

  3. Transfer the paste to a bowl.

  4. Add psyllium husk, salt, baking soda, vinegar, and olive oil.

  5. Mix well until combined.

  6. Rest for 2-3 minutes until it thickens into a dough-like consistency.

  7. Wet your hands and shape into round buns.

  8. Place on a lined baking tray.

  9. Sprinkle with everything bagel seasoning or any seeds of your choice (sesame, flax, pumpkin, etc.).

  10. Preheat oven to 180°C (350°F).

  11. Bake for 25 minutes.

  12. Let cool for 10 minutes before handling.
