Soak red lentils for 4 hours. Drain completely.
Blend with ¼ cup water into a smooth, fine paste.
Transfer the paste to a bowl.
Add psyllium husk, salt, baking soda, vinegar, and olive oil.
Mix well until combined.
Rest for 2-3 minutes until it thickens into a dough-like consistency.
Wet your hands and shape into round buns.
Place on a lined baking tray.
Sprinkle with everything bagel seasoning or any seeds of your choice (sesame, flax, pumpkin, etc.).
Preheat oven to 180°C (350°F).
Bake for 25 minutes.
Let cool for 10 minutes before handling.
