In a bowl, mix olive oil, soy sauce, honey, lemon juice, minced garlic, salt, and pepper
Add the salmon cubes and toss to coat evenly
Let marinate for 15–20 minutes in the refrigerator
Heat a skillet over medium-high heat, add a little oil, then sear the salmon cubes for 1–2 minutes per side until golden brown and slightly crispy, or air fry at 400°F (200°C) for 7–8 minutes, shaking halfway through
Sprinkle with chives or sesame seeds while hot
Mix together mayo, lemon juice, Dijon mustard, dill, olive oil, salt, and pepper until creamy and smooth
Chill the dill sauce until ready to serve
Arrange salmon bites around the dipping sauce, drizzle a little olive oil on top of the sauce, and garnish with extra dill
