Jalapeño & Cheddar Pesto
  1. Add the coriander, jalapeños and toasted pumpkin seeds to a blender. Peel the garlic clove and add in, then roughly chop the cheddar and add. Add the lemon juice and season generously with salt and pepper.

  2. Add ⅓ of olive oil and begin to blend, then continue to add olive oil until you get to a thick pesto consistency.
