Honey Cranberry Chicken Bake With Goat Cheese
  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil.

  2. Season chicken breasts with salt and pepper, then sear them in a hot skillet with olive oil for 2–3 minutes on each side until lightly golden.

  3. In a small bowl, mix honey, balsamic vinegar, rosemary, and cranberries. Pour the mixture over the seared chicken in the baking dish.

  4. Bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

  5. Remove from the oven and top each chicken breast with crumbled goat cheese and chopped walnuts.

  6. Return to the oven for 3–5 minutes, just until the cheese softens. Garnish with fresh thyme before serving.
