Brown Sausage, drain and set aside
Large Skillet or Dutch Oven, medium low heat, add Olive Oil and heat for a few minutes
Add Shallot for 2-3 minutes
Add Garlic for 2-3 minutes
Reduce heat to LOW
Add Tomato Paste and Red Pepper Flakes, cook 4-5 minutes
Add Vodka, let it cook off for a couple minutes
Add Pesto, cream, browned sausage stir and let it come together for 10 minutes. Good time to add S&P
Cook pasta of choice to al dente….add to sauce
Add pasta water, butter, parm, basil, mix well
Thin sauce with more pasta water if needed
