Pesto Pasta Alla Vodka
  1. Brown Sausage, drain and set aside

  2. Large Skillet or Dutch Oven, medium low heat, add Olive Oil and heat for a few minutes

  3. Add Shallot for 2-3 minutes

  4. Add Garlic for 2-3 minutes

  5. Reduce heat to LOW

  6. Add Tomato Paste and Red Pepper Flakes, cook 4-5 minutes

  7. Add Vodka, let it cook off for a couple minutes

  8. Add Pesto, cream, browned sausage stir and let it come together for 10 minutes. Good time to add S&P

  9. Cook pasta of choice to al dente….add to sauce

  10. Add pasta water, butter, parm, basil, mix well

  11. Thin sauce with more pasta water if needed
