cumin beef biang biang noodles inspired by xian famous foods

Noodles:

  1. Mix together flour, water, and salt. knead, rest, repeat until very soft.

  2. roll out into rectangle and slice out 6 portions

  3. cover each piece in oil, cover dish with plastic wrap, and let it rest for couple hours!

  4. when ready, roll out a portion. Use a chopstick to indent the middle.

  5. biang them out on the counter

  6. tear through the middle indent

  7. immediately boil til they float

  8. Lay the toppings on the noodles, then pour hot neutral over the noodles and mix

    Marinated Cumin Beef:

    Stir Fry & Spice Mix

  1. Cut steak into thin strips

  2. marinate with - baking soda, soy sauces, cumin, cornstarch, salt, sugar, chinese cooking wine and lastly oil

  3. fry in oil and strain it out

  4. stir fry together garlic, ginger, onions, chili peppers, green onion. Add the spice mix as you cook to season.

  5. Add the beef back in, then add to noodles, top with soy sauce and chinese cooking wine, and enjoy!
