Cook tater tots in an air fryer at 400 degrees for about 20-25 minutes.
Brown sausage in a skillet over medium high heat. Before the sausage is browned add the 6 chopped up pieces of bacon to the skillet with the sausage. Stir well and cook until sausage is browned and bacon is cooked through.
Remove the sausage and bacon from the skillet and drain grease. Set aside.
In a bowl, whisk together 6 eggs, a splash of milk, salt, and pepper. Cook eggs to your liking in the skillet.
Once eggs are cooked, add the sausage and bacon back to the skillet with the eggs. Top with 1 cup of shredded cheese. Let sit on the stove or pop under the broiler for just a minute to melt the cheese.
Make a white gravy packet or make homemade gravy. To make gravy, melt 2 tbsp of butter in a skillet over medium heat. Add 2 tbsp of flour and stir until well incorporated and starting to thicken. Add 1 ½ cups of milk and stir consistently until you get a consistency you like. Season to taste with salt and pepper.
Build breakfast bowls by adding tater tots, gravy, eggs, bacon, and sausage to a bowl.
