Healthy Peanut Butter Greek Yogurt Breakfast Muffin Bars
  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.

  2. In a mixing bowl, combine peanut butter, Greek yogurt, honey or maple syrup, egg, and vanilla extract. Stir until fully smooth and creamy.

  3. Add oat flour, baking powder, cinnamon, and salt to the bowl. Stir until all the dry ingredients are fully incorporated.

  4. Pour the batter into the prepared pan and spread it evenly. Bake for 20–24 minutes, or until golden on top and a toothpick inserted into the center comes out clean.

  5. Let the bars cool completely in the pan before slicing.
