Slice the chili, garlic, shallot, lemongrass, and lime leaves and mix it up with salt and sugar.
Roast the shrimp paste for about 2-3 minutes and shattered into the mix ingredients.
Heat up the olive oil onto the boiling point, pour over the mix and we’re done.
Cook the spaghetti in boiling salt water until al dente.
After cooking, splash about five tbsp of olive oil into the pasta, then season with salt and pepper.
Mix the spaghetti and the sambal matah together.
Optional: Add some chicken karaage (fried chicken) to the pasta.
