Dice one apple, mi with cinnamon and set aside.
Preheat the oven to 350°F (175°C). Line an 8-inch (20 cm) round cake pan with parchment paper.
In a large mixing bowl, whisk the eggs, honey, vanilla bourbon paste, and almond butter until smooth.
Add the almond flour, baking powder, and diced apple. Gently mix until the batter is well combined.
Pour the batter into the prepared cake pan and smooth the top with a spatula.
Sprinkle sliced almonds evenly over the top, if desired.
Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10–15 minutes before removing and serving.
