Sweet Potato Burgers
  1. Cook your American sweet potatoes in the oven or microwave until cooked (about 50 mins in the oven at 200c or 10 mins in the microwave on high)

  2. Once cooked, add them to a bowl with crushed chickpeas, brown rice, fresh coriander, chopped chilli, red onion, garlic, cumin, smoked paprika, and dried coriander

  3. Mix it all together and form into patties

  4. Bake in the oven for about 30 minutes at 200c or until browned

  5. For the sauce, mix vegan yoghurt, mayo, harissa, fresh coriander, lime, and a splash of oil

  6. Toast your burger buns and add your patties

  7. Layer on the sauce, sliced avo, pickled red onions, and lettuce - and enjoy
