Plum Cake Recipe
  1. Preheat the oven to 175 °C (top/bottom heat – 350 °F). Grease the tin or line with baking paper.

  2. Prepare the plums: mix quartered plums with sugar and lemon juice.

  3. For the batter, beat butter, sugar, vanilla extract and salt until creamy. Add the eggs one at a time. Mix the flour with baking powder and stir in alternately with the milk until a smooth batter forms. Spread into the prepared tin.

  4. Arrange the plums closely on top of the batter, slightly overlapping.

  5. For the streusel, knead all ingredients quickly with your hands. Sprinkle evenly over the plums.

  6. Bake in the preheated oven for approx. 45–50 minutes. If the plums are very juicy, you may need to bake 5 minutes longer.

  7. Let the cake cool and dust with powdered sugar before serving, if desired.
