In a blender, combine all the ingredients except for the butter and blend on high until well mixed.
Heat a medium saucepan over medium heat and melt a small pat of butter.
Once the butter is melted and the pan is hot, pour in the batter to form silver dollar-sized pancakes.
Cook the pancakes over medium heat until the edges start to set, then flip them and continue cooking until the batter is fully cooked through.
If you're making multiple batches, add another pat of butter to the pan before starting a new round.
