Blend the batter: Add the cottage cheese (or Quark), eggs, protein powder, flour, baking powder, and salt into a blender. Blend until completely smooth and uniform. Let the batter rest for 2 minutes while your pan heats.
Preheat the pan: Heat a non-stick skillet over medium-low heat. Lightly coat with a tiny bit of butter or coconut oil spray.
Pour small rounds: Pour the batter into small circles (about 3-4 inches across). Cook until you see bubbles form on top and the edges look visibly dry and set.
Flip gently: Carefully slide a thin spatula underneath and flip. Cook for another 1 to 2 minutes until golden brown and cooked through to the center.
