Avocado Deviled Eggs
  1. You can make them in an egg cooker or on the stovetop! Place eggs in a single layer in the bottom of a large pot. Cover with a total depth of about 3-inches of water (the eggs should be covered, plus about an additional inch of water). Bring to a boil over high heat. When water comes to a rolling boil, cover and remove from heat immediately. Let pot sit covered for about 10 minutes before transferring to an ice bath (bowl full of ice and cold water). When eggs are cool enough to handle, you can store them in the fridge or begin peeling them!

  2. Cut eggs in half and remove yolks, placing them in a medium bowl.

  3. To the same bowl, add the avocado. Using a fork or potato masher, mash the mixture together until no chunks remain. Then stir in the remaining ingredients (avocado, lime juice, cilantro, onion, & spice). Taste & adjust as you'd like.

  4. I like to use a cookie scoop to distribute the avocado filling amongst the egg white halves, however you can also just use a spoon or a piping bag for a prettier look!

  5. Top the eggs with red pepper flakes, extra cilantro, chopped chives, or red pepper flakes! Enjoy!
