Heat oil in a skillet over medium-high heat. Add chicken and cook until cooked through, about 5-6 minutes. Transfer out of pan and set aside.
Melt butter in a pot over medium heat. Add onion, celery, and jalapenos. Cook until softened, about 4-5 minutes.
Add flour and cook 1 minute, stirring frequently.
Add cooked chicken, milk, frozen corn, creamed corn, thyme, red pepper, and salt. Bring to a boil, then reduce heat to medium-low and simmer until thickened, about 5 minutes.
