EMPANADITAS (minced meat turnovers)
  1. Bake roast until completely done. grind to a small consistency. place in a big pan. add applesauce, raisins and spices. add sugars ½ cup alternatively....making sure to taste as you put each ½ cup in. the meat should be VERY sweet. add brandy. cook for about ½ hr.

  2. Get oil prepared. a deep fryer works best. heat oil until bubbles when a small piece of dough is added.

  3. I suggest finding a place outside to fry the empanaditas. otherwise, your house will smell like burnt oil for a week!

  4. Add yeast to water and leave to set. in a large bowl, add sugar and lard.....cream. in a separate bowl, mix flour and salt together. once yeast is active, add to lard/sugar mixture. mix.....then add flour mixture. knead to mix, but don not over-mix.

  5. Roll dough until about ⅛" thick. cut circles into dough. circles should be about 3" in diameter. take dough over to meat mixture and add 1 tsp on top of dough. fold over and crimp VERY well. otherwise, the turnover will open when it is placed in oil....VERY messy if this happens!

  6. Fry on both sides until very golden brown. place on a paper bag for draining. yields about 6 dozen. freeze in a ziplock bag. when you want to eat one, or many, place in a wet paper towel and microwave for 30secs.
